Pork Burgers with Potato Rosti & Sliced Apple

Prep: 25 min   Cook: 30 min   Serves: 4

Ingredients:

  1. 2 tbsp olive oil
  2. 2 onions, sliced thinly
  3. 1 tbsp finely grated ginger
  4. 500g minced pork
  5. ¼ tsp salt
  6. 50g mixed salad leaves
  7. 1 loaf Turkish bread, cut into 4, halved and toasted
  8. Spliced Apple
  • 2 apples, peeled and chopped
  • 2 tbsp water
  • 1 tsp mixed sice
  • 1 finely grated lemon rind
  1. Potato Rosti
  • 2 potatoes, coarsely grated and squeezed dry
  • 2 onions, sliced thinly
  • salt to taste
  • 2 tbsp butter

Method:

  1. Heat 1 tbsp oil in a pan over medium heat. Stir-fry onions and ginger for 3 min or until tender. Allow to cool.
  2. Combine pork and onion mixture in a large bowl. Season with salt. Shape mixture into 4 even-sized and flat patties.
  3. To prepare spiced apple, combine all ingredients in a saucepan. Simmer, covered, for 8 to 10 min or until soft.
  4. To prepare rosti, combine potatoes and onions in a bowl. Season with salt. Shape mixture into 4 even-sized patties. Heat 1 tbsp butter in a pan over medium heat. Cook 2 rosti for 3 mins each side, flattening with a spatula. Drain on paper towels. Repeat with remaining butter and rosti. Remove and wipe pan clean.
  5. Heat remaining oil in cleaned pan. Cook pork patties for 4 – 5 min each side or until cooked through.
  6. Place leaves on bottom half of toast. Top with a patty, spiced apple and rosti. Cover with top half of toast. Ready to serve.
