Mint Parfait Ice-cream

Sharing below is a recipe taken from my collection (source: Women’s Weekly magazine, January 2008).

Prep: 15 min   Serves: 4


  1. 3 egg yolks
  2. 60g sugar
  3. 90ml mint liquor (optional)
  4. 50g fresh mint, chopped
  5. 250ml whipping cream
  6. 4 small coconuts, tops chopped off
  7. berries or fruits of your preference


  1. Whisk egg yolks and sugar till fully incorporated. Pour into a blender and add mint liquor (if using) and fresh mint. Blend well.
  2. Whisk whipping cream and fold into the blended mixture.
  3. Pour into coconuts or containers.
  4. Cover and leave in the freezer for 2 hours.
  5. Garnish with fruits just before serving.
