Duck Breast with Mandarin Orange Sauce

Sharing below is a recipe taken from my collection (source: U Weekly magazine).

Ingredients:

  • 2 duck breasts
  • 1 tsp nutmeg powder
  • 1 tsp cinnamon powder
  • 1 Mandarin orange
  • 2 tbsp olive oil
  • salt and pepper to taste
  1. Ingredients B
  • 1 Mandarin orange
  • 4 tbsp caster sugar
  • 500g butter
  • 1 cup cream

Method:

  1. Make Mandarin orange sauce. Extract juice from Mandarin orange. Bring juice to boil and add in sugar.
  2. Double-boil cream and add into sauce. Monte with hard butter.
  3. Preheat oven to 180°C.
  4. Marinate duck breasts with nutmeg powder, cinnamon powder and salt & pepper to taste.
  5. Extract juice from Mandarin orange and mix well with olive oil. Thereafter, season duck breasts with the Mandarin olive seasoning.
  6. Bake in oven for 15 min. Pour Mandarin orange sauce over duck breasts and garnish with chives to serve.

Tip:

  1. The double-boiled cream cannot be too hot, otherwise the Mandarin orange would not be smooth.
