Mini Abalone with Minced Prawns


Sharing below is a recipe taken from my collection (source: Singapore Women’s Weekly magazine, September 2004).

Prep: 10 min   Cook: 15 min   Serves: 2


  1. 100g prawns, minced
  2. a pinch of potato starch
  3. 60g broccoli
  4. 20g dried scallop, soaked in warm water for 20 min, drained and reserve water
  5. Seasoning A:
    • 1/3 tsp salt
    • 1/3 tsp sugar
    • 1 egg white
    • 1/2 tsp potato starch
  6. Seasoning B:
    • 150ml chicken stock
    • 2 pinches salt
    • 2 pinches sugar
    • 1/2 tsp chicken seasoning powder
    • 1/2 tsp potato starch

  1. Shell prawns and devein. Using the flat of a cleaver, flatten prawns. Using the back of the cleaver, chop prawns until finely minced. Combine with seasoning A. Set aside.
  2. Spread a pinch of potato starch on the bottom of the abalone. Spread minced prawn over to cover. Set aside on a plate.
  3. Bring water to a boil over a bamboo steamer. Once water comes to a rolling boil, steam abalone with minced prawn for 7 – 10 min.
  4. In the meantime, blanch broccoli by cooking in a pan of boiling water for about 1 min. Remove and set aside on serving plate.
  5. Bring ingredients in seasoning B, except potato starch, to a slow boil. Add dried scallops and reserved water; cook for about 2 – 3 min. Thicken stock with potato starch.
  6. Remove cooked abalone from steamer and place on side of broccoli. Pour hot sauce over and serve.
